Florentine Frittata

Ingredients

2 Tbs Water

1/2 tsp dried basil

1/2 tsp pepper

1/4 tsp salt

1/4 tsp dried oregano

16 oz carton egg substitute = 8 eggs

1 10 oz pkg frozen chopped spinach, thawed, drained and squeezed dry

2 tsp butter

2 cups thinly sliced vidalia onion

2 cups frozen shredded hash brown potatoes

1 7 oz bottle roasted red peppers, drained and sliced

3/4 cup crumbled feta cheese

Directions

Combine ist 7 ingredients in a medium bowl and set aside.

Melt butter in a 10 inch cast iron or non-stick skillet over medium heat. Add onion, sauté 5 minutes.

Add hash browns, cook 9 minutes or until lightly browned, stirring occasionally.

Pour egg mixture over onion mixture. Arrange red pepper slices on top. Cook 7 minutes or until set.

Preheat broiler. Sprinkle frittata with cheese.

Broil 5 minutes or until lightly browned.

Cut into 4 wedges.
