Sticky Cocoa Molasses Cake

Ingredients

1 cup all-purpose flour (120 g)

1/2 cup unsweetened cocoa powder (50 g)

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened (113 g)

1 cup brown sugar, packed (200 g)

1/2 cup molasses (120 ml)

2 large eggs

1 teaspoon vanilla extract

1/2 cup hot water (120 ml)

For the Chocolate Glaze:

1/2 cup heavy cream (120 ml)

1 cup semi-sweet chocolate chips (175 g)

1 tablespoon unsalted butter

Directions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper for easy removal.

Prepare the dry ingredients: In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.

Cream the butter and sugar: In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Add molasses and eggs: Mix in the molasses until well combined. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the hot water. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Bake the cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Make the chocolate glaze: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips and butter. Let it sit for a minute, then stir until smooth and glossy.

Glaze the cake: Once the cake is completely cool, place it on a serving plate. Pour the chocolate glaze over the top, allowing it to drip down the sides. Use a spatula to spread it evenly if needed.
