Garlic Bread Pasta

Ingredients

2 whole head of garlic

1 tablespoon olive oil

1 pound pasta

1/2 cup (1 stick) softened butter, plus 1 tbsp

1/2 cup breadcrumbs

1/2 cup grated Parmesan cheese + plus always extra to add when the dish is finished

1 tablespoon chopped fresh parsley

Salt and pepper to taste

Directions

Roast the garlic: Preheat the oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves. Drizzle with olive oil and wrap in foil. Roast for 30-40 minutes, or until the cloves are soft and golden brown. Let cool slightly, then squeeze the roasted garlic cloves out of their skins.

Cook the pasta until al dente

Make the garlic butter: In a medium bowl, mash the roasted garlic with the softened butter, parsley, parm and s&p, you can add red pepper flakes for some heat.

Toast the breadcrumbs: Heat a skillet over medium heat. melt 1 tbsp butter and add the breadcrumb mixture and toast, stirring frequently, until golden brown and crispy (about 2-3 minutes).

In the same pot you cooked the pasta, add garlic butter, the cooked pasta and toss to coat. add a splash of pasta water if needed and top with toasted breadcrumbs and extra parm.
