Quick & Easy Potsticker Soup

4 tbsp sesame oil
bok choy, halved
1 cup shiitake mushrooms, sliced
1 Tbsp garlic, minced
1 inch fresh ginger, peeled and grated
2 Tbsp white miso paste
4-6 cups chicken bone broth (low sodium)
3 tbsp low-sodium soy sauce
2 tbsp rice vinegar
1 bag @traderjoes potstickers
green onions, toasted sesame seeds, chili oil
Directions
Heat 1 Tbsp oil in a skillet over medium high heat. Cook the potstickers until browned and cooked through (follow package directions) and then set aside.
Heat 2 tbsp oil in a large Dutch oven over medium-high heat. Add the bok choy and cook 3-4 minutes until charred on the edges. Transfer to a plate.
To the same Dutch oven, add 1 tbsp oil, the mushrooms, garlic, and ginger. Cook 3-5 minutes, until fragrant. Stir in the broth and bring to a boil over high heat. Stir in the bok choy, potstickers, soy sauce, and rice vinegar. Remove from the heat.
Serve topped with green onions, toasted sesame seeds and chili oil.
