Succulent Leg of Lamb
3-5 lb Leg of Lamb
10 cloves garlic
1 large onion
Fresh herbs: Sage, thyme, rosemary
2 Tbsp Mayonnaise
1 Tbsp Dijon Mustard
Seasonings:
1 Tbsp Kinders’ Blend (salt and pepper)
1 Tbsp Smoked Paprika
1 tsp Kinders’ Mediterranean seasoning
1 tsp dried Italian herbs
1 tsp cumin
1/4 tsp onion
1/4 tsp garlic powder
1/4 tsp dried mustard
1/4 tsp Jacobsen rosemary salt
1 cup stock (beef, chicken or veg)
Directions
Preheat oven to 325F
In a roasting pan, add chopped onion, smashed garlic and fresh herbs to the bottom of pan.
Rinse & pat dry the leg of lamb. Create slits all over lamb and stuff with cloves of garlic and lay on top of roasting rack
Create your marinade: using mayo, mustard and above seasonings. Lather the lamb with the marinade (top and bottom) skin side up. Add the stock to the bottom of roasting pan. Cover the entire pan with foil tightly and place in oven for 2 hours. After 2 hours remove the rack and allow the lamb to sit in its own juices. Cover with foil and roast another 2 hours or until it falls apart easily with tongs.
If you wish to add carrots and potatoes, you would add those in the last hour or roasting.
