Creamy Chicken Gnocchi Bake Meal Prep

Ingredients

For one serving of the base:

1 cup spinach

150g chicken breast

170g potato gnocchi (I used fresh)

30g diced mushroom (I used frozen)

1tsp diced onion (I used frozen)

For all 4 meal preps (divide by 4 if doing 1)

400ml water & chicken stock

1 heaped tbsp skyr fat free yoghurt (or any yoghurt)

1tsp garlic

1tsp paprika

1/2tsp mixed herbs

1/2tsp chilli flakes

Salt/ pepper to taste

To top:

15g shredded mozerella

Black pepper

Directions

Pre heat the oven to 190 degrees

Add the spinach, chicken, gnocchi, mushroom & onion to the dish.

Seperately, you will need 100ml chicken stock per dish, x 4 for 4 dishes, then add the paprika, garlic, Italian herbs & chilli flakes, and yoghurt, and whizz until combined (whizz for longer to thicken)

Add the chicken stock mixture to the meal prep bowls (100ml per container) and then top with cheese & cracked black pepper.

Give it a little stir together, making sure the spinach is fully submerged in the stock mix (so that it wilts) sauce will thicken as it cooks & cools.

Cook in the oven at 190 degrees for approximately 35-40 minutes or until the chicken is cooked.

Make sure meal is thoroughly re-heated before eating.
