Day 1: Menstrual Phase

Ingredients

1 tablespoon olive oil

1 tablespoon tamari or soy sauce

4 cloves garlic, minced

2 inch ginger, grated

2 stalks scallions, white and green part separated

1-2 teaspoons sambal oelek chili paste

32 fl oz vegan no beef broth or vegetable broth

1/2 block firm tofu, cubed

1 baby bok choy, cut into quarters

1/4 cup white miso paste

1/4 cup water

1 tablespoon tahini

2 servings ramen noodles, cooked according to package

Directions

In a pan on medium heat, fry the tofu and bok choy for a few minutes on each side. Sprinkle with tamari. Remove them from the pan and add the garlic, ginger, white part of the scallions, and chili paste. Cook for 1 minute, until fragrant.

Add the broth and bring to a gentle simmer. In a small bowl combine the miso paste, water, and tahini. Whisk to combine, adding some hot broth if necessary. Pour this mixture into the pot. Add your cooked noodles to a bowl, ladle with broth, and add tofu, bok choy, and green onions on top.
