pistachio crusted halibut with bone broth rice & green beans

6 oz filets of halibut (1 per person you are serving!),
2-3 tsp dijon mustard
1/3 cúp finely chopped pistachios
1/3 cup panko breadcrumbs
2 cloves of garlic minced zest of 1 lemon
2 tbsp fresh parsley ) nonet
11/2 tbsp olive oi
1/2 tsp salt
1/2 tsp black pepper + green beans or veggie of choice, extra lemon & parsley for serving!
bone broth rice:
1 cup basmati rice
3 cloves garlic minced
2 cups bone broth
juice of half a lemon
1/2 tsp salt olive oil

1. First preheat oven to 375. While oven is preheating, get all ingredients prepped/chopped as everything comes together quickly. In a bowl, mix together the pistachio topping (pistachios panko, minced garlic, lemon zest, parsley, honey, olive oil, salt & pepper.) Mix together well so the breadcrumbs absorb the oil and everything is well incorporated.
2. Next get started on the rice. Heat a pot over low heat and add in a little olive oil. Once hot add in the minced garlic and saute for a few minutes - careful not to burn. Then add in the rice - mix around and let the rice toast for a minute and then add the bone broth + lemon juice + salt and bring to a boil. Once boiling, reduce heat to a low simmer, cover, and cook for 15 minutes. When 15 minutes are up, remove from heat and let sit for 5 minutes before
1. While rice and fish are cooking, prep the green beans. Add bag to the microwave for 3- ninutes or until mostly soft, then heat a skillet over medium high heat. Once hot, add in olive oil and then add green beans to sear for a few minutes. Add salt, pepper, and any extra lemon
