Ground Beef, Sweet Potato & Zucchini Skillet

Ingredients

A one-pan wonder with savory beef, tender sweet potatoes, and zucchini for a balanced, tasty meal.

½ lb (225g) ground beef (or turkey)

1 medium sweet potato, peeled and cubed

1 small zucchini, sliced into half-moons

½ small onion, diced

1 clove garlic, minced

1 tsp paprika

½ tsp chili powder

Salt & pepper, to taste

1 tbsp olive oil

Fresh parsley, chopped for garnish

Directions

Cook the Sweet Potato:

Heat olive oil in a large skillet over medium heat. Add cubed sweet potato and cook for 8-10 minutes, stirring occasionally, until just tender.

Brown the Ground Beef:

Push sweet potato to the side and add ground beef to the skillet. Season with paprika, chili powder, salt, and pepper. Cook until browned and cooked through, about 5-6 minutes.

Add Veggies:

Add diced onion and minced garlic, cooking for another 2 minutes until fragrant. Stir in sliced zucchini and cook for an additional 4-5 minutes until everything is tender.

Combine & Finish:

Stir everything together, taste and adjust seasoning if needed. Sprinkle with fresh parsley before serving.
