Beef and Noodles Skillet

12 oz egg noodles
1 lb ground beef
1 small onion, diced
1 large carrot, peeled and diced
1 red bell pepper, diced
1 can diced tomatoes (14.5 oz, undrained)
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups beef broth
1 cup heavy cream or half-and-half
1 tablespoon Worcestershire sauce
1 cup shredded mozzarella or cheddar
Optional: parsley for garnish
Directions
Cook the egg noodles according to the package directions, then drain and set aside.
In a large skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain if needed.
Add carrot and red bell pepper and cook for 4 to 5 minutes, until the vegetables start to soften.
Stir in garlic, paprika, Italian seasoning, salt, and pepper. Cook for 1 minute.
Add the diced tomatoes, beef broth, and Worcestershire sauce. Stir and bring to a gentle simmer.
Stir in the heavy cream and let the sauce bubble for 3 to 4 minutes to thicken slightly.
Add the cooked noodles to the skillet and fold until everything is coated and combined.
Sprinkle cheese over the top, cover, and cook for 2 to 3 minutes until melted.
Garnish with parsley and serve warm.
