Beef Mince + Veggie Pasta (or Zoodles)

Ingredients

400g lean beef

1 onion, chopped

2 garlic cloves, minced

1 zucchini, diced

1 carrot, grated

1 can (400g) crushed tomatoes

2 tbsp tomato paste

300g wholewheat pasta (or appraised zucchini)

Olive oil, salt, pepper, dried basil / oregano

Directions

  1. Cook pasta according to package (if using)

  2. In a pan, sauté onion & garlic in olive oil until fragrant

  3. Add mince, brown it, break up lumps

  4. Add zucchini, carrot, cook 2-3 mins

  5. Stir in crushed tomatoes + tomato paste + herbs. Simmer 10-15 mins

  6. Combine with pasta or serve sauce over pasta

Notes

Prep tip: store sauce and pasta separately to avoid sogginess. Reheat and combine
