Deconstructed Wonton Soup

Ingredients:
For the Chicken Meatballs:
•1 lb (450g) ground chicken
•1 tbsp chicken powder
•2 tbsp cornstarch
•½ tsp MSG (optional)
•1 tbsp Chinese five-spice
•1 tsp red pepper flakes
•½ tsp white pepper
•2 tbsp Chinese cooking wine
•2 tbsp sesame oil
•¼ cup water
For the Broth:
•1 tbsp sesame oil
•½ onion, chopped
•2 tbsp minced garlic
•2 green onions, chopped
•2 (32 oz) boxes of chicken stock (about 8 cups)
•2 tbsp soy sauce
•1 head of bok choy, chopped
•1 pack of wonton wrappers, cut diagonally
Directions
Prepare the Chicken Meatballs:
1. In a bowl, combine ground chicken, chicken powder, cornstarch, MSG, five-spice, red pepper flakes, white pepper, Chinese cooking wine, sesame oil, and water.
2. Mix well until the meat becomes smooth and sticky.
3. Cover and refrigerate while preparing the broth.
Make the Broth:
1. Heat sesame oil in a large pot over medium-high heat.
2. Add chopped onion and minced garlic, stirring until fragrant and softened.
3. Toss in green onions and cook briefly.
4. Pour in the chicken stock and bring to a boil.
5. Add soy sauce and stir.
Cook the Meatballs & Wonton Wrappers:
1. Once the broth is boiling, scoop small portions of the chicken mixture into the pot to form meatballs.
2. Let them cook for a few minutes until they turn opaque and float.
3. Add the chopped bok choy and stir.
4. Toss in the wonton wrappers and let them soften, thickening the broth slightly.
Serve & Enjoy!
