Gram’s Coconut Cake

Ingredients

Cake:

2 cups sugar

1½ cups oil

4 eggs

1 cup buttermilk

2 1/2 cups self rising flour

Filling:

2 1/2 c sugar

2 c milk

2 6oz pkg frozen coconut

Directions

Mix as any cake.

Bake in 3 pans at 325 for 22 min.

Boil milk and sugar in heavy pot for 10 minutes. Add frozen coconut, let simmer until cake is ready. Spread between layers, on top, and pat some on sides with hands.

Best if it sits for a day or two before eating.
