Honey Sesame Chicken Lunch Bowls (Meal Prep)

Ingredients

500g chicken breast, cut into strips

1 tbsp honey

1 tbsp sesame oil

1 tbsp soy sauce

1 garlic clove, minced

1 tsp ginger, grated

2 cups mixed steamed vegetables (broccoli, carrots, snap peas)

2 cups cooked brown rice or quinoa

Sesame seeds, spring onion to garnish

Directions

  1. Pre-cook rice or quinoa and divide into 4 containers

  2. In a bowl, mix honey, sesame oil, soy sauce, garlic, ginger

  3. Marinate chicken in sauce for 10-15 minutes (or overnight)

  4. Pan-fry or bake chicken until cooked through

  5. Steam / stir-fry vegetables

  6. Distribute chicken + veggies into containers over rice

  7. Garnish with sesame seeds and spring onion

Notes

Prep tip: keeps 3-4 days in fridge. Reheat in microwave or oven
