Honey Hoisin Chicken

½ cup hoisin sauce
¼ cup honey
¼ cup soy sauce
1 tablespoon vegetable oil
1 lb chicken breast
Salt and freshly ground black pepper
Chopped fresh cilantro for serving, optional
Directions
1. In a small bowl, whisk together the hoisin sauce, honey, and soy sauce. Set aside.
2. Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp, and cook for 2 minutes, turning occasionally. Season the shrimp with salt and black pepper.
3. Add the hoisin sauce mixture, and bring to a simmer. Simmer for 2 minutes, until the shrimp is opaque and cooked through and sauce thickens and coats the shrimp like a glaze.
4. Reserve half of the shrimp for the Shrimp Cakes with Honey Lemon Aioli (page 176) or another future meal. Refrigerate for up to 3 days.
5. Top the remaining shrimp with fresh cilantro (if using), and serve.
