Houston’s Tomato Soup Copycat

Ingredients

2 tbsp butter

1 yellow onion, diced

2 cloves garlic, minced

1 tsp curry powder

1 28 oz can crushed tomatoes or whole tomatoes

1 cup tomato juice

1 cup full-fat coconut milk

1/2 cup heavy cream

1 tsp sugar, or to taste

Salt and black pepper

Optional: pinch of cayenne

Honey, for drizzling

Croutons, ideally rustic/crunchy

Directions

Sauté onion in butter until soft, about 5 to 7 minutes.

Add garlic and curry powder. Cook 30 seconds.

Add tomatoes, tomato juice, sugar, salt and pepper.

Simmer 20 to 30 minutes.

Add coconut milk and cream.

Blend until very smooth.

Taste. Add more salt, sugar or a tiny bit of honey if it tastes too sharp.

Serve with croutons and a light honey drizzle.
