Ingredients

You’ll need:

2 sheets of rice paper

1 egg

60g baby spinach

1 spring onion (green part only), finely sliced

1 tbsp chopped chives

25g feta cheese

75g lactose-free cottage cheese

Salt and pepper, to taste

Sesame seeds, for topping

Directions

Preheat your oven to 180°C. Line a small baking tray with baking paper

Wilt the spinach

In a bowl, beat the egg + set aside half for later. To the remaining egg, add the spinach, spring onion, chives, feta, cottage cheese, salt, and pepper. Mix well.

Pour the reserved egg into a plate. Dip each sheet of rice paper into the egg until fully coated and slightly softened. Lay them side by side on a clean chopping board, slightly overlapping in the centre to create one larger surface.

Spoon the filling into the centre of the rice paper. Gently fold and shape the wrapper into a round parcel, tucking in the sides as you go.

Sprinkle with sesame seeds & bake for 40 minutes or until golden and crispy. Allow to cool slightly before serving.
