Ube Baked Oats - No Protein Powder

Ingredients

1 banana, mashed

60ml egg whites

230g greek yogurt

200ml low fat milk

1tsp/5g ube flavouring

1tsp baking powder

20g sweetener

120g oat flour

pinch of salt

Topping:

10g shredded coconut

50g light cream cheese

15g monk fruit icing powder

Drop of ube flavouring

Directions

Preheat oven to 180c/350f

In a bowl, combine all wet ingredients then add in dry ingredients with a pinch of salt and mix well.

Transfer into a loaf tin and bake in oven for around 30-35min or until cooked through, let cool for at least 30min on wire rack.

Combine light cream cheese, icing powder, and ube flavouring - spread over cooled baked oats, sprinkle with shredded coconut, and enjoy!
