Maple Pecan Pie

Ingredients

6 tsp cold butter, cut into cubes

1 cup packed brown sugar

2/3 cup maple syrup

1/2 tsp salt

3 eggs

1 tsp vanilla extract

2 cups chopped pecans

1 cup pecan halves (optional)

1 pie crust

Directions

Preheat oven to 350 degrees. Melt butter in a saucepan. Add brown sugar & maple syrup & bring to a low simmer, whisking constantly.

Remove from heat & allow to cool for 10 15 min.

Add eggs, salt & vanilla extract, whisking until combined. Stir in pecan pieces and pour into prepared pie pan. Optionally, add additional pecan halves on top. Spray a piece of aluminum foil with oil. Cover the pie lightly with the foil and bake for 30 min. Remove foil and continue baking until the pie is mostly set & only slightly jiggly

(20-25 minutes). Allow to cool before serving.
