Tuscan Chicken

1 tablespoon sun dried tomato oil (from the jar) or olive oil
3 tablespoons butter (divided)
3 chicken breasts (sliced into 1 inch long slices)
1 teaspoon salt (divided)
1/2 teaspoon ground black pepper
2 cloves garlic (minced)
1 Onion (fine chopped)
2 cups chicken stock
1 teaspoon oregano
¼ teaspoon red chili flakes
1 teaspoon paprika
2 tablespoons corn starch
1/3 cup sundried tomatoes (chopped)
1 cup heavy cream
1 cup fresh grated parmesan cheese
2 cups baby spinach leaves (cut off stems)
Directions
Lay cut chicken pieces out on flat pan or plate and season with salt and pepper.
In a large saute pan on medium heat, add 1/2 of the butter and cook the chicken in batches for 2-3 minutes on each side until golden brown. Add additional butter between batches. Don't overcroud the pan or chicken will not brown properly. (adjust heat if browning too fast). Transfer cooked chicken to holding dish.
Add onion and sun dried tomato oil (or olive oil) and sautee untill soft
Add minced garlic to the pan, and cook for 1 minute or until fragrant.
Add chicken stock and deglaze the pan by removing any bits stuck to the bottom of the pan. These bits contain a lot of flavor that will enrich the cream sauce.
Add oregano, chili flakes, and the remaining salt and pepper.
Simmer for 3 minutes.
Lower heat and stir in the heavy cream, freshly grated parmesan, and paprika.
mix corn starch with 3 tablespoons of water then whisk into sauce.
Continue to heat sauce on medium and stir constantly untill thickened. Do not boil the sauce or you might break or curdle the cream. If sauce is not thick enough, you can add additional corn starch desolved in water and continue to thicken.
Add the chopped sundried tomatoes, and spinach leaves to the pan. stir and allow the spinach leaves to wilt.
Put the chicken back in, and spoon the cream sauce over it.
Serve over buttered pasta with extra grated parmesan cheese.
