Breakfast Muffins

1 lb Jennie-O turkey sausage
2 cup Kodiak buttermilk pancake mix (252 g)
2/3 cup reduced fat fiesta blend shredded cheese (56 g)
3oz bag bacon bits
1 1/2 cup fat free milk (360 ml) I use fairlife
1/4 cup maple syrup (60 g) I use sugar free
Directions
Preheat oven to 400 F. Spray 12 muffin tin compartments with cooking spray and spread around completely with your hands so nothing sticks.
Cook the turkey sausage in a frying pan on medium high heat, breaking apart into small pieces, until fully cooked (about 5 min). Remove from heat.
In a mixing bowl, add pancake mix, cheese, sausage, bacon bits, milk and maple syrup. Stir everything together until combined, then scoop evenly into the 12 muffin tins.
Bake for 18 minutes, or until tops are golden brown. Let cool for a few minutes, then remove from muffin tin and enjoy warm with more maple syrup!
