Crockpot Zucchini Lasagna

4 medium zucchinis, sliced thinly
1 lb ground beef or turkey
1 jar (24 oz marinara sauce)
2 cups ricotta cheese (or cottage cheese)
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
1 tbsp Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Directions
Prepare Zucchini:
Slice zucchinis thinly (about 1/8 inch thick).
Cook Meat:
In a skillet, brown the ground beef or turkey over medium heat.
Drain excess fat and stir in marinara sauce. Add salt, pepper, and Italian seasoning. Simmer for 10 minutes.
Mix Cheese:
In a bowl, combine ricotta cheese, egg, Parmesan cheese, salt, and pepper. Mix well.
Layer Lasagna:
Spray crockpot with cooking spray.
Start with a layer of zucchini slices, followed by a layer of meat sauce, then a layer of cheese mixture. Top with shredded mozzarella.
Repeat layers until all ingredients are used, ending with mozzarella on top.
Cook:
Cover the crockpot and cook on low for 4-6 hours, checking at 4 hours. If too watery, leave the lid off for the last 30 minutes.
Serve:
Let sit for 10 minutes before serving. Garnish with fresh basil or parsley if desired.
