Baked Buffalo Wings

4 pounds chicken wingettes or drumettes
2 egg whites, beaten until frothy
½ cup hot sauce, such as Frank’s Red Hot
1 teaspoon honey
4 tablespoons (½ stick) salted butter

Directions
Preheat the oven and prep the wings.
Preheat the oven to 450°F with a rack in the center position. In a large bowl, mix together the salt, garlic powder, and paprika. Toss the chicken wings with the seasonings until fully coated. Pour the frothy egg whites over the seasoned wings and toss until each wing is completely coated.
Arrange for baking.
Line a rimmed sheet pan with foil and set a metal cooling rack on top. Arrange the chicken wings skin side up on the cooling rack in a single layer.
Bake until crispy.
Reduce the oven temperature to 425°F. Bake for 45 to 50 minutes, until the wings are deep golden brown and the skin is crispy.
Make the buffalo sauce.
Meanwhile, in a small saucepan over medium-high heat, whisk together the hot sauce and the honey. Bring to a simmer, then stir in the butter and cook until melted, 1 to 2 minutes. Remove from the heat.
Toss and serve.
Transfer the baked wings to a bowl. Pour the Buffalo sauce over the wings and gently toss until fully coated. Serve immediately with blue cheese dressing and celery sticks alongside.
