Country Sausage Au Gratin

1 lb. sausage cut into 1/2 inch slices
1 cup chopped onion
1 T. oil
1 pkg. au gratin potatoes
2 1/2 cups hot water
1/4 tsp. pepper
4 medium carrots cut into 2 inch julienne strips
1 pkg. frozen broccoli, thawed and drained
1 cup shredded cheese
Directions
Cook and stir sausage and onion in oil in skillet until onion is tender. Stir in potatoes, sauce mix, water and pepper. Cover and simmer 10-15 minutes. Stir in carrots. Simmer until crisp-tender and potatoes are tender. (10 min.). Stir in broccoli and cheese till heated through.
