Chipotle Honey Chicken Bowl

Ingredients

2 lbs (907g) raw boneless skinless chicken thighs

3 chipotle peppers in adobo

3 tbsp adobo sauce

2 tbsp honey

juice of 2 limes

5 garlic cloves

1½ tbsp olive oil

1 tsp salt

½ tsp pepper

Bowl Base

What You Need:

1 cup uncooked jasmine rice (cook and divide into 4 bowls)

fresh cilantro

Optional

1 tbsp guac for avocado in each bowl

1 tbsp pico de gallo in each bowl

Insane Green Sauce

What You Need:

¾ cup (170g) nonfat Greek yogurt

½ packed cup cilantro

juice of 2 limes

¼ cup mild pickled jalapeños

1 garlic clove

salt & pepper to taste

splash of water

Directions

Add all of your chicken ingredients into a blender and blend until smooth. Pour over chicken and let marinate for at least 30 minutes.

Cook rice according to package directions.

Cook chicken in a medium-high heat pan until fully cooked and slightly caramelized from the honey.

Add all green sauce ingredients into a blender and blend until smooth and creamy.

Build 4 bowls by adding rice, sliced chipotle honey chicken, pico, cilantro, and finish with a heavy drizzle of the insane green sauce.
