Creamy Beef and Bowtie Pasta

1 lb ground beef
8 oz bowtie pasta (farfalle)
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon paprika
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Directions
Bring a large pot of salted water to a boil and cook the bowtie pasta according to package directions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3–4 minutes. Stir in the garlic and cook for 1 minute more.
Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain any excess fat.
Pour in the beef broth and bring to a gentle simmer. Stir in the heavy cream, cheddar cheese, Parmesan cheese, and paprika. Cook, stirring, until the cheese is melted and the sauce thickens slightly.
Add the cooked pasta to the skillet and stir until everything is well coated. Season with salt and pepper to taste.
Serve warm, garnished with fresh parsley if you like.
