Thai Lettuce Bowls

Ingredients

  • 1 lb ground turkey

  • 1-2 cups (dry) jasmine or basmati rice

  • 1 whole red cabbage, shredded

  • 2-3 whole carrots, shredded

  • 1-2 cups Romaine lettuce, shredded

  • 2-4 garlic cloves

  • Soy sauce

  • 2-3 tbs Honey

  • sriracha

  • 1-2 tsp lime juice

  • Salt to taste

  • 1/2 tsp ground ginger

  • 1/4 cup chives, sliced

  • slivered almonds

Directions

  • cook 1-2 cups rice

  • brown ground turkey in skilled with olive oil, crushed garlic, and 1 tsp sriracha. Season to taste with salt

  • in small bowl, whisk together about 2 tbs honey (can also use hoisin sauce instead), 1-2 tsp lime juice, 1 tsp sriracha, 1/4 cup soy sauce, and 1/2 tsp ground ginger

  • add sauce into skillet with turkey and let simmer for 5 minutes

  • add rice and turkey to bowl

  • top with shredded carrots, cabbage, lettuce, slivered almonds, chives

  • Can top with soy sauce, sriracha, and/or green dragon sauce from TJ’s

Notes

This recipe is felt with the heart. Amounts not exact. Add or take away as you please, to taste.
