Ginger Garlic Salmon Spring Rolls

Ingredients

Salmon

Ginger

Garlic

Soy sauce

Green onion

Fried shallots

Roasted peanuts

Lettuce

Cucumber

Mint

Lime

Directions

Grate ginger

Mince garlic

Salt and pepper salmon

Make paste for salmon: ginger, garlic, soy sauce (enough to make a paste)

Spread on top of salmon

Bake at 350F until cooked (145F)

(Optional) Microwave some green onion in oil.

Keep some fresh green onion for garnish

When salmon is done, top with green onion mixture, fresh green onion, fried shallots, peanuts

Eat as spring rolls, rice bowl, noodle bowl

Notes

Pair with soy sauce dipping sauce

1/4 cup soy sauce

1/2 cup water

2 TB sugar

1 small clove of garlic (minced)

1.5 lime juice

Chili garlic to liking
