Easy Cheesy Shakshuka

Ingredients

4–5 ripe tomatoes

3–4 eggs

Β½ cup grated cheese (mozzarella, cheddar, or your favorite)

Salt and pepper to taste

Olive oil (optional)

Directions

Cut the tomatoes in half and place them cut-side down on a skillet.

Cover with a lid and cook over medium heat until the tomatoes are soft and the skins start to loosen (about 10 minutes).

Remove the skins and mash the tomatoes with a spoon or spatula.

Sprinkle the grated cheese over the mashed tomatoes and stir until melted and combined.

Crack the eggs into the mixture, spacing them out.

Cover again and cook until the eggs are done to your liking.

Add salt and pepper to taste. Serve hot!πŸ˜‹πŸ«ΆπŸΌ
