Ingredients

200g cucumber

Salt and black pepper

500g plain Greek yoghurt

Handful of fresh dill, chopped

Handful of fresh coriander, chopped

2 garlic cloves, crushed

30m! lemon juice

Directions

1 Use a teaspoon to scoop out and discard the seeds from the middle of the cucumber. Grate or chop the cucumber, depending which you prefer.

2 Place the cucumber in a colander and sprinkle with salt. Set aside for10 minutes, then squeeze it out with kitchen paper to remove excess moisture.

3 In a bowl, mix together the yoghurt, cucumber, dill, coriander, garlic and lemon. Season with salt and black pepper to taste.
