Beer Cheese Dip

57g Butter
30g All-Purpose Flour
300g Half & Half
160g Beer
5g Salt
9g Dijon Mustard
2g Paprika
2g Onion Powder
2g Garlic Powder
350g Shredded Cheddar Cheese
1 Slice American Cheese
Directions
1. Melt butter in medium saucepan over medium-low heat.
2. Add flour and continuously whisk for 1-2 minutes.
3. Gradually stir in half & half, whisking it into the mixture until smooth.
4. Gradually stir in beer, whisking it into the mixture until smooth.
5. Stir in the paprika, onion powder, garlic powder, and salt.
6. Turn heat to low. Stir in freshly shredded cheese.
7. Frequently whisk cheese into mixture until melted and smooth.
