Ingredients

1 lb boneless, skinless chicken breasts (or thighs for extra flavor, but adjust points)

2 tbsp olive oil (or olive oil spray for fewer points)

1 lime (juice and zest)

3 cloves garlic (minced)

1 tsp cumin

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp oregano

1/2 tsp onion powder

1/4 tsp cayenne pepper (optional, for extra heat)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Directions

Marinate the Chicken:

In a small bowl, combine the lime juice and zest, garlic, cumin, chili powder, smoked paprika, oregano, onion powder, cayenne (if using), salt, and pepper.

Rub the chicken breasts with olive oil (or spray with olive oil spray to reduce points), then coat evenly with the spice mixture.

Let the chicken marinate for at least 30 minutes (or overnight for more flavor) in the fridge.

Cook the Chicken:

Heat a large skillet or grill pan over medium-high heat. Once hot, cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F/74°C).

Remove from heat and let the chicken rest for a few minutes before slicing or shredding.

Serve:

Slice or shred the chicken and serve it in a low-point tortilla, over cauliflower rice, or with your favorite Weight Watchers-friendly toppings like salsa, pico de gallo, or avocado (in moderation).
