Crockpot Spareribs, Kielbasa, Sauerkraut, & Potatoes

1 lb Fingerling Potatoes
1 Medium Onion, chopped
1 Medium Granny Smith Apple, peeled and coarsely chopped
3 Thick-sliced Bacon Strips, cooked and coarsely crumbled
32 oz. jar Sauerkraut, undrained
½ tsp Salt
¼ tsp Pepper
2 lbs Pork Spareribs, cut into 2" slabs, then cut into individual rib pieces
2 Tbsp Vegetable Oil
1 lb Kielbasa Sausage, cut into ¾" slices
2 cups Chicken Broth
Chopped Parsley, for garnish
Directions
1. In a 6-qt. slow cooker, layer the fingerling potatoes, onion, apple, and bacon. Top with the undrained sauerkraut.
2. Salt and pepper the ribs. In a large skillet, heat oil over medium high heat; brown the 2" rib pieces on all sides, in batches. As they finish browning, transfer ribs to the slow cooker. Add sausage and broth.
3. Cook on low 6-7 hours, or until ribs are tender. Garnish with chopped parsley.
