Dump & Bake Spicy Peanut Ramen Noodles

red curry sauce
400ml coconut milk
1 1/2 cups chicken stock
2 1/2 tbsp red curry paste
2 tbsp crunchy peanut butter
2 tbsp soy sauce
1 tbsp sesame oil
1/2 tbsp minced ginger
240g ramen noodles
250g diced chicken breast (optional)
2 bunches bok choy, chopped
2 eggs
Chilli oil crunch, to drizzle
1/4 cup fresh coriander, chopped
Directions
Preheat oven to 200C. Place all red curry sauce ingredients into a baking dish and whisk until combined. Add Ramen noodles and press to submerge. Place chicken around the noodles and sprinkle over bok choy. Cover with foil and bake for ~15 mins. Remove from oven and loosen noodles using chopsticks. Crack over eggs and return to oven for 8-10 mins or until chicken is cooked through and eggs cooked to your liking. Drizzle with chilli oil and sprinkle with coriander. #onepan #bakednoodles #ramen
