Crockpot Taco Casserole

1 1/2 lbs ground beef
32 oz frozen diced potatoes
2 cups shredded cheddar or Mexican blend cheese
1 packet taco seasoning
1 cup salsa
1 can (10 oz) Rotel, undrained
1/2 cup sour cream
1 small onion, diced
1/2 cup beef broth
Salt and pepper, to taste
Green onions or cilantro, for garnish
Directions
Brown the ground beef and diced onion in a skillet over medium-high heat for 6–7 minutes. Drain extra grease.
Spray the crockpot with nonstick cooking spray.
Add frozen diced potatoes, cooked beef, taco seasoning, salsa, Rotel, beef broth, salt, and pepper.
Stir everything together until well mixed.
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until potatoes are tender.
Stir in sour cream and 1 cup of shredded cheese until creamy.
Sprinkle remaining cheese on top. Cover for 5–10 minutes until melted.
Garnish with green onions or cilantro and serve warm with tortilla chips, sour cream, or a side salad.
