Halibut Enchiladas

Ingredients

2 Ibs Halibut

8 oz Cream cheese

1 can Green chilies

6 large Tortillas

Monterey Jack cheese

Cheddar cheese

Salsa

White sauce:

6 tablespoons butter

6 tablespoons flour

1/2 tsp Salt

1/2 tsp Pepper

3 cups milk

Directions

Lightly cook halibut (oven @350 for 10-15 min, light coating olive oil, salt and pepper).

Mix halibut with cream cheese and green chiles. Spread tortilla with mixture and some white sauce. Roll tortillas and place in lightly oiled pan.

Cover with remaining white sauce and top with cheese mixture.

Bake @350 for 30 minutes. Garnish with salsa.

White sauce:

Melt butter in a pan and stir in an equal amount of flour and salt and pepper. Once combined, stir in milk and heat until boiling, stirring constantly. Let cook at boiling for about a minute, then remove from heat.

Notes

Prefer to make creamier with sauce in enchiladas.

Add olives?

Play around with white sauce- sub some bacon grease for butter?
