High Protein Sheet Pan Quesadillas

Ingredients

3 cups shredded chicken

1 can black beans

1 red pepper

1 small red onion

1/2 cup green onions

1 can of corn drained

shredded cheese

1 cup Greek yogurt

1 packet taco seasoning

burrito size tortillas

Directions

preheat oven to 450F

In a large bowl, add chicken, red pepper , corn, onions, Greek yogurt, cheese and taco seasoning & mix well

On a baking sheet, brush on avocado oil. Spoon your mixture inside and spread evenly.

Fold tortillas over.

Bake in the oven at 450 for 25-30 minutes. Remove & let cool. Cut quesadillas into squares. Serve warm with your favorite toppings!
