Ingredients

1/2 cup butter, melted

1 cup milk

3/4 cup flour

4 eggs

Honey and sugar, for toppings

Directions

Heat your oven to 375 degrees F then generously grease a mini muffin pan both inside and around the edges or each cup.

2 – In a medium saucepan, melt butter, add milk then bring to a boil.  Add flour all at once, stirring vigorously, cooking and stirring until the mixture forms a smooth ball that does not separate.  Remove from the heat and let it cool for 5 minutes.

3 – Add the eggs one at a time, beating each into the dough for 1 minute until the dough is smooth.  Divide the dough evenly among the prepared mini muffin pan cups filling each to about two thirds full.

4 – Bake for about 30 minutes or until golden brown and puffy.  Meanwhile combine the sugar and cinnamon and make a batch of whipping cream for the centers of the puffs if desired.

5 – Remove the nun’s puffs from the oven and allow them to cool fully before filling them with cream or dip the tops of the warm puffs in melted butter then into the cinnamon sugar mixture. You can also drizzle them with honey or serve them with fresh fruit.

Notes

If wanting cream inside: 1 cup heavy cream (cold, for best whipping results)

2 tbsp powdered sugar (sweetens the cream)

½ tsp vanilla extract (adds flavor)

*can just whip the cream and not add the sweetener stuff
