Lemon Chicken Orzo

Ingredients

For orzo:

1 cup dry orzo

2 cups chicken broth/stock

1/4 white onion chopped

2 cloves minced garlic

Salt and pepper

1 tbsp olive oil (for the pan)

For the chicken:

2 chicken breasts, chopped into 2 inch cubes

1 lemon, juiced

1 tbsp olive oil

Salt + pepper

Paprika

Garlic salt

For topping:

Reduced fat feta crumbles

Chopped parsley

Directions

1. Chop your chicken into 2 inch cubes.

Toss them into a bowl and add your olive oil and seasonings. Marinade for 30 minutes ish).

After 30 minutes preheat your airfryer or grill to 450

Add olive oil to a pot and then add in your onions and garlic. After about 5 minutes, add in your chicken broth and bring to a boil. Once boiling, add in your orzo and cook for about 10 minutes.

The broth will absorb fully into the orzo, so no need to drain.

Add your chicken into the airfryer or put on the grill for ~8-10 minutes (or when the internal temperature of the chicken reaches 165 degrees)

Add your orzo and chicken onto the plate and top with feta crumbles and parsley
