Arugula & Strawberry Salad with Blackened Salmon

Ingredients

  • 4 cups arugula

  • 1 cup strawberries, chopped

  • 1/2 cup candied pecans

  • 1 ripe avocado, sliced

  • 1/4 cup dates, pits removed and chopped

  • 2 oz goat cheese crumbles

Balsamic Vinaigrette:

  • 1/3 cup Olive oil

  • 3 tbsp balsamic vinegar

  • 1 tsp honey

  • 1 tsp Dijon

  • 1 small shallot, minced

  • Salt & pepper

Blackened Salmon Bites:

  • 12 oz salmon, cut into cubes

  • 2 tsp paprika

  • 1 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1/4 tsp oregano

  • 1/8 tsp cayenne

  • 2 tsp olive oil

Lemon wedge to finish

Directions

For the salmon bites, toss the salmon, seasonings and oil to coat. Air fry at 400 for 5-7 minutes. For a regular oven, bake at 425 for 8-10 minutes. Finish with a squeeze of lemon.

Toss all ingredients with about 1/2 the dressing until evenly coated. Serve with the salmon bites and additional dressing if desired. Makes 2 servings.
