Disability Friendly Risotto

Ingredients

Crockpot Risotto

3 3/4 cup broth of choice

1/2 cup white wine (or substitute with more broth)

1 can cream of mushroom soup (Vivian’s Live Again makes a vegan variety)

2 tbs butter (substitute with vegan butter or omit)

1/2 cup frozen chopped onions

1/2 tsp black pepper

1 tbsp dehydrated garlic

1 1/2 cup arborio, carnaroli, or vialone nano rice

Shredded parmesan cheese (Follow Your Heart and Violife make vegan varieties)

Directions

Add all ingredients except for the rice and the cheese to a crockpot. Cover and cook on high for about 30 minutes or until fully hot and the lid is steamy. Stir in rice. Cover and continue to cook on high for 2 hours. Stir, top with parmesan cheese, and serve.
