Cowboy Butter Chicken Skewers

8 wooden skewers, (soaked in water for 30 minutes)
2 boneless skinless chicken breasts (about 1 pound), (cut into 1-inch cubes)
1 tablespoon extra virgin olive oil
1 teaspoon kosher salt
½ teaspoon black pepper
½ cup cowboy butter, (melted)
fresh parsley, (chopped for garnish)
Directions
Toss chicken with oil, salt, and pepper.
To a large bowl, add chicken, oil, salt, and pepper. Toss to coat.
Thread chicken onto skewers.
Working one skewer at a time, thread 4-5 chicken cubes onto the soaked wooden skewers, leaving a little space between each piece.
Air fry chicken skewers.
Air fry* at 400°F for 11-12 minutes, flipping halfway, or until the chicken has reached an internal temperature of 165°F.
Place chicken skewers onto serving platter.
Once the chicken skewers are cooked through, carefully remove them from the air fryer and place them on a serving platter.
Brush with melted cowboy butter.
Drizzle or brush with the melted cowboy butter. Garnish with parsley.
