Potatoes and green beans Pugliese-style are one of those dishes that tell the story of the flavors of traditional peasant cooking(Cucina povera) when vegetables and local produce made up the everyday diet—the food that was put on the table each day. A humble cuisine!

5-6 yellow potatoes, peeled and sliced in large wedges

1 lb green beans

1 Roma or vine tomato, chopped

1 large onion, chopped

2 garlic cloves, minced

1 small can tomato sauce roughly (250-390ml)

3/4 cup water

Olive oil

Salt /pepper

Parsley

Directions

in a deep pot add olive oil -on medium low sauté garlic and onions roughly 2-3 min until translucent

now add in the chopped tomato, cook together 2 minutes now add in potatoes and tomato sauce , salt and pepper and the water. The potatoes should be almost covered not fully Don't add too much water. Cover and cook on low about 7-10 min

once potatoes are slightly fork tender but not cooked enough add in the green beans and submerge them gently in tomato sauce. If liquify reduced way too much then add a tad more water. Add in parsley .

simmer on low for another about 15-18min. Check potatoes and beans around the 12min mark to see for readiness.

serve with Italian crusty bread
