Green Goddess Caprese Melts

1 10-12 inch french baguette
2 roma tomatoes, thinly sliced
½ cup mozzarella, sliced (3-5 pieces sliced)
½ cup arugula
1 Tbsp grated Parmesan (optional for garnish)
2 Tbsp balsamic glaze (optional for garnish)
⅓ cup plain greek yogurt
3 Tbsp fresh lemon juice
½ tsp salt
½ tsp pepper
½ Tbsp shallots
¼ cup fresh basil
2 Tbsp fresh parsley
2 Tbsp fresh mint
Directions
Preheat the oven to 400º. Make the green goddess dressing.
Blend the dressing ingredients together, give it a taste and adjust as needed (lemon, seasonings, fresh herbs, shallot, yogurt)
Spritz the baguette with a little oil in the middle. Toast it on a baking sheet for 3-4 minutes.
Build the melt! Toast it back in the oven for another 5-10 minutes or until the cheese is melted and bread is browned and crispy. Be sure it doesn't burn.
After the second toast, add the fresh arugula, parmesan and balsamic if using. Feel free to drizzle extra green goddess dressing if desired, enjoy!
