Healthy Chickpea Peanut Butter Cookies

Ingredients

1 cup cooked chickpeas (165 g)

1/3 cup peanut butter (80 g)

2 tbsp honey (30 g)

1 tsp vanilla extract (5 ml)

1/4 tsp baking powder (1 g)

1/3 cup dark chocolate chips (50 g)

Directions

Blend chickpeas, peanut butter, honey, vanilla extract and baking powder until smooth.

Transfer the dough to a bowl, add dark chocolate chips and mix.

Scoop small cookies onto a parchment-lined baking tray and flatten slightly.

Bake at 180°C / 350°F for 10–12 minutes until lightly golden.

Let cool for a few minutes before serving.
