Chicken Quesadillas

Ingredients

Chicken Marinade

2 8oz Chicken Breasts

Olive Oil

1 2/3 tsp Salt

Zest of 1 Lime

Juice of 1/2 a Lime

4 Garlic Cloves, minced

1 tsp Black Pepper

1 1/4 tsp Chili Powder

1/2 tsp Oregano

1 Tbs Tequila

2 1/4 tsp Agave Syrup

Cheese Mixture

225g Pepperjack, shredded

225g Medium Cheddar, shredded

125g Provolone, shredded

Misc. Ingredients

4 Large Tortillas

Pickled Jalapenos, diced

1 Tbs Olive Oil, more as needed

Directions

Pan-sear chicken over medium heat, 4 minutes per side or until cooked through

Let chicken rest for 5 minutes, then slice into ½” cubes

Heat tortillas in microwave, covered in a damp paper tower, for 15 seconds to make them pliable

Layer Chicken, then Jalapenos, then Cheese Mixture on one side and fold in half

Heat 1 Tbs Olive Oil in a large saucepan over medium-low heat

Gently lay quesadilla into saucepan and apply even pressure across the top to ensure even browning

Let cook until cheese has melted and tortilla is brown and crispy, about 2 minutes each side. Add olive oil between cooking as needed

Slice into fourths with a pizza slicer and serve
