Red Pesto Sausage Pasta

Ingredients

300g uncooked pasta

A spray of olive oil

1 onion, finely diced

6 sausages (400g Heck)

1 tsp garlic Italian seasoning

1 tsp basil

1 tsp paprika

Salt & pepper

1 tbsp tomato puree

40g reduced fat red pesto

75ml single cream

Directions

Cook the onion and sausages (out of their skin if preferred) in a tiny bit of oil until softened and cooked through.

Whilst it’s cooking, get your pasta on to boil in a separate saucepan.

Add the seasoning followed by the tomato purée & pesto then stir in the cream along with a ladle of pasta water.

Leave to simmer for a few minutes until it thickens, then add in the cooked & drained pasta (along with a little extra pasta water if needed).

Serve up and top with chopped basil & parsley.
