2 tortillas (mission carb balance)
1 cup diced green granny smith apple
1/4 cup monk fruit
1/2 cup water
1 tbsp cornstarch
1 tbsp flour
1 tbsp cinnamon
for cinnamon sugar coating:
1/4 cup monk fruit
1/2 tbsp cinnamon
for apple pie “icing” drizzle
1 tbsp vanilla greek yogurt
Directions
add the diced apple, water, monk fruit sweetener, & cinnamon to a small saucepan bring to a simmer.
in a small bowl mix together 1 tbsp cornstarch & 1 tbsp water. pour the cornstarch + water mixture into the saucepan & mix, this will thicken up your apple filling. remove saucepan from heat & set aside.
cut a tortilla in half. in a small cup, mix flour + 1 tbsp water. fold the tortilla in a cone shape like shown in the video, using the flour mixture as a “glue” to keep the tortilla together. press the top closed using a fork.
air fry the apple pies for 10 minutes at 400F.
brush pies with coconut oil. dip in monk fruit & cinnamon sugar
