Lemon Coconut Protein Balls

Ingredients

1 cup rolled oats

1/2 cup vanilla protein powder

1/2 cup shredded coconut

2 tbsp honey or maple syrup

1 tsp lemon zest

2 tbsp lemon juice

Directions

Mix oats, protein powder, and shredded coconut in a bowl.

Add honey, lemon zest, and lemon juice. Stir to combine.

Roll into small balls and coat with shredded coconut if desired.

Refrigerate for 15-20 minutes until firm.

Store in an airtight container in the fridge for up to one week.
