I'm Always Down for a Dish with Sun Dried Tomatoes

Ingredients

4-5 chicken breast

1/2 of a large onion

3 cloves of garlic

1/2 cup of sun dried tomatoes (in olive oil)

1/2 cup of freshly grated parm

2 cups of spinach

1 cup heavy cream

1 TBS italian seasoning

Olive oil

Salt & pepper

Directions

Start by taking your chicken breast and pounding thin until they are all the same thickness.

Season both sides of the chicken with salt and pepper. Set aside.

Dice up your onion and garlic. Then, heat some olive oil in a pan and cook your chicken for 3-4 minuets on each side, until internal temp reaches 165F. Set aside.

Next, lower the heat and saute your onion and garlic with some olive oil for 1-2 minutes. Add in your sundried tomatoes along with italian seasoning and cook for another min before adding the spinach.

Once the spinach is cooked down, add in cream, cheese, salt & pepper and bring to a simmer. Then, lower the heat and add the chicken back in. Let that finish cooking for about 6-7 more minutes.

Serve with your favorite pasta or enjoy on its own!
